# Directions:
01 - Brown the bacon or sausages in a skillet over medium heat until fully cooked. Remove and drain on paper towels, then chop into bite-sized pieces.
02 - In the same skillet, heat 1 tablespoon of oil. Cook potatoes, onion, and bell pepper with salt, pepper, and smoked paprika for about 10 minutes until golden and tender. Set aside.
03 - Whisk eggs with milk, salt, and pepper in a bowl. Heat remaining 1 tablespoon oil in a non-stick pan, pour in the egg mixture, and gently scramble until just set.
04 - Heat tortillas in a dry pan or microwave for 20 seconds until warm and pliable.
05 - Distribute the potatoes, scrambled eggs, meat, and shredded cheese evenly down the center of each tortilla.
06 - Fold in the sides of each tortilla and roll tightly to enclose the filling completely.
